Totopo’s food truck has a new look, a new name and a new owner.
The white, blue and orange truck operated by the popular restaurant is now purple and orange. Its new name is Vaya Mexican Street Food and it’s popping up all over Pittsburgh. That’s appropriate, since vaya means “go” in Spanish.
“We are confident that Vaya is in great hands,” said Juan Grimaldo, Totopo owner.
With Grimaldo focusing more on brick and mortar restaurants Totopo, 660 Washington Road, Poco Loco, 698 Washington Road, and Tocayo in Shadyside, he saw it as the perfect opportunity for Marco Honores, Academy Avenue, to take ownership of the truck and strike out on his own. Honores has been running the food truck under the Totopo name for four seasons. “He took ownership from day one. He handled the food truck as if it was his food truck,” Grimaldo pointed out.
Honores likes operating a food truck. “Every day is different,” he said. “I get to know a lot of parts of Pittsburgh. There are beautiful neighborhoods where I’ve never been (before).”
For now, Totopo will continue providing made-to-order tacos, burritos and more for Vaya. After this season, Honores will find another commissary kitchen.
“I’m very confident that Marco’s going to be successful,” Grimaldo said.
